- 16 oz cream cheese (softened)
- 1 cup powdered sugar
- 2 tsp vanilla extract
- 2 cups heavy whipping cream
- 1/4 cup granulated sugar
- For the strawberry layer:
- 4 cups fresh strawberries (sliced)
- 1/4 cup granulated sugar
- 1 tbsp lemon juice
- 1 tbsp cornstarch
- 2 tbsp water
- For garnish:
- 1 cup whipped cream
- 10 whole strawberries
- 1/4 cup white chocolate shavings
Instructions
1. Prepare the Crust:
- 1. Make the crust: Mix graham crumbs, melted butter, and sugar. Press firmly into a 9×13″ dish. Chill 15 mins.
- 2. Prepare strawberries: Combine sliced strawberries, sugar, and lemon juice in saucepan. Cook 5 mins on medium.
- 3. Thicken strawberry sauce: Mix cornstarch and water, stir into strawberries. Cook 2 mins until thickened. Cool completely.
- 4. Make cream cheese layer: Beat cream cheese, powdered sugar, and vanilla until smooth. Set aside.
- 5. Whip the cream: Beat heavy cream and sugar until stiff peaks form.
- 6. Combine layers: Fold half the whipped cream into cream cheese mixture. Spread over crust.
- 7. Add strawberries: Spoon cooled strawberry mixture over cream layer. Top with remaining whipped cream.
- 8. Chill: Refrigerate at least 4 hours (best overnight).
- 9. Garnish with fresh strawberries and chocolate shavings before serving.
Notes
• Substitute raspberries for strawberries if preferred
• For neater slices, use a hot knife when cutting
• Can be made 2 days ahead – store covered in fridge
