- For the Hazelnut Mocha Cheesecake:
- 8 oz (225 g) cream cheese, softened
- 1/3 cup powdered sugar
- 1 tsp vanilla extract
- 2 tbsp instant espresso powder
- 1 tbsp hot water
- 1/3 cup hazelnut spread
- 1 cup heavy whipping cream, whipped to soft peaks
- For the Chocolate Ganache Coating:
- 8 oz (225 g) semi-sweet chocolate, finely chopped
- 1/2 cup heavy cream
- 1 tbsp unsalted butter
- For the Hazelnut Crunch Layer:
- 1/2 cup roasted hazelnuts, finely chopped
- 1/4 cup chocolate wafer cookie crumbs
- 2 tbsp melted unsalted butter
- 1 tbsp cocoa powder
- For Garnish (optional):
- Chopped roasted hazelnuts
- Dark chocolate curls
- Light dusting of cocoa powder
Instructions
- Dissolve the espresso powder in the hot water and let it cool.
- In a large bowl, beat the cream cheese, powdered sugar, vanilla extract, hazelnut spread, and cooled espresso until smooth.
- Fold the whipped cream into the cheesecake mixture until light and airy.
- In a small bowl, combine the chopped hazelnuts, chocolate wafer cookie crumbs, melted butter, and cocoa powder.
- Spoon the cheesecake mixture halfway into silicone dome molds.
- Add a spoonful of the hazelnut crunch mixture to the center of each dome.
- Cover with the remaining cheesecake mixture and smooth the tops.
- Freeze for at least 6 hours, or until completely firm.
- Heat the heavy cream until just simmering, then pour it over the chopped chocolate. Let stand for 2 minutes before stirring until smooth. Stir in the butter.
- Unmold the frozen cheesecake domes and place them on a wire rack over a baking tray.
- Pour the slightly cooled ganache evenly over each dome until fully coated.
- Garnish with chopped roasted hazelnuts, dark chocolate curls, and a light dusting of cocoa powder. Chill for 20 minutes before serving.
