  • For the Chicken:
  • 6 boneless, skinless chicken thighs
  • 2 tablespoons vegetable oil
  • 2 tablespoons butter
  • 3 cloves garlic, minced
  • 2 tablespoons soy sauce
  • 1 tablespoon teriyaki sauce
  • 1 teaspoon sesame oil
  • 1 teaspoon paprika
  • ½ teaspoon black pepper
  • ½ teaspoon onion powder
  • Salt to taste
  • For the Rice:
  • 3 cups cooked jasmine rice (day-old preferred)
  • 1 tablespoon butter
  • 1 tablespoon vegetable oil
  • ½ small onion, finely diced
  • 3 cloves garlic, minced
  • 2 tablespoons soy sauce
  • 1½ cups chicken broth
  • 2 green onions, sliced
  • 1 tablespoon chopped parsley
  • Quick Yum Yum Sauce:
  • ½ cup mayonnaise
  • 1 tablespoon ketchup
  • 1 teaspoon rice vinegar
  • ½ teaspoon garlic powder
  • ½ teaspoon paprika
  • 1 teaspoon sugar
  • 1 tablespoon water (if needed)

Instructions

  1. Pat the chicken thighs dry and season with paprika, onion powder, black pepper, and salt.
  2. Heat vegetable oil in a large cast-iron skillet over medium-high heat.
  3. Sear the chicken for 5-6 minutes per side until deeply golden and cooked through.
  4. Add butter and minced garlic, spooning the garlic butter over the chicken for 1 minute.
  5. Stir in soy sauce, teriyaki sauce, and sesame oil until the chicken is coated in a glossy glaze. Remove and keep warm.
  6. In the same skillet, melt butter with a little oil and sauté the onion until softened.
  7. Add garlic and cook for 30 seconds until fragrant.
  8. Stir in the cooked rice and pour in the chicken broth and soy sauce. Cook while stirring until the broth is absorbed and the rice becomes fluffy and lightly golden.
  9. Fold in sliced green onions and parsley.
  10. Whisk together all Yum Yum sauce ingredients until smooth.
  11. Slice the chicken and arrange it over the rice. Drizzle generously with Yum Yum sauce and garnish with extra parsley before serving.
