Hot Honey Peach & Whipped Goat Cheese Bombs

  • For the Peach Filling:
  • 2 ripe peaches, peeled and finely diced
  • 1 tbsp honey
  • 1/2 tsp lemon juice
  • 1/4 tsp cinnamon
  • 1 tsp cornstarch
  • For the Whipped Goat Cheese:
  • 6 oz (170 g) goat cheese, softened
  • 1/4 cup cream cheese, softened
  • 1 tbsp heavy cream
  • 1 tsp honey
  • 1/4 tsp salt
  • For the Dough Shell:
  • 1 can refrigerated biscuit dough (8 pieces)
  • 2 tbsp melted butter
  • 1/4 tsp sea salt
  • For the Hot Honey Drizzle:
  • 1/4 cup honey
  • 1 tsp chili flakes
  • 1/2 tsp apple cider vinegar
  • 1 tsp warm water
  • For Garnish (optional):
  • Fresh thyme leaves
  • Cracked black pepper

Instructions

  1. Cook diced peaches with honey, lemon juice, cinnamon, and cornstarch over medium heat until thickened, then cool.
  2. Whip goat cheese, cream cheese, heavy cream, honey, and salt until smooth and airy.
  3. Flatten biscuit dough pieces into small discs.
  4. Add a spoonful of whipped goat cheese and a small amount of peach filling to each disc.
  5. Seal and shape into tight balls, ensuring no filling leaks.
  6. Place on a baking tray and brush with melted butter.
  7. Bake at 375°F (190°C) for 12–15 minutes until golden brown.
  8. Warm honey with chili flakes, then stir in apple cider vinegar and water.
  9. Drizzle hot honey over warm bombs.
  10. Finish with thyme and cracked black pepper.
