- The Smash Patties & Bun:
- 12 oz ground beef (80/20 blend for maximum caramelization)
- 2 slices Pepper Jack cheese
- 2 brioche buns, split
- 2 crisp butter lettuce leaves
- 2 thick ripe tomato slices
- Salt and freshly cracked black pepper
- Garlic Butter Lobster:
- 5 oz cooked lobster meat (tail and claw), coarsely chopped
- 1½ tbsp unsalted butter
- 1 clove garlic, finely minced
- ¼ tsp Old Bay or Cajun seasoning
- 1 tsp fresh lemon juice
- 1 tbsp fresh parsley, finely chopped
- Creamy Cajun Sauce:
- 3 tbsp mayo
- ½ tsp Cajun seasoning
- ½ tsp Dijon mustard
- ½ tsp lemon juice
Instructions
- Mix the Sauce & Toast Buns:
- Whisk the mayo, Cajun seasoning, Dijon, and lemon juice until smooth. Lightly butter the brioche buns and toast them cut-side down on a hot skillet until golden brown. Set aside.
- Prep the Meat:
- Divide the ground beef into two loose, round balls. Do not overpack.
- Smash the Patties:
- Heat a heavy cast-iron skillet or griddle over high heat until smoking. Place beef balls on the steel and press firmly with a weighted spatula into thin patties with lacy, crisp edges. Season generously with salt and pepper.
- Sear & Melt:
- Sear for 2 minutes until deeply browned and crispy. Flip, immediately top each patty with a slice of Pepper Jack cheese, and cook for another 40–60 seconds until melted.
- Poach the Lobster:
- In a separate small skillet over low heat, melt the butter and gently sauté the garlic for 20 seconds. Toss in the lobster meat and Old Bay seasoning, stirring gently for 45 seconds until warmed through and coated. Stir in lemon juice and chopped parsley.
- Assemble the Stack:
- Spread a thick layer of Cajun sauce on the bottom bun.
- Add lettuce and tomato slice.
- Place the cheesy smash patty on top.
- Pile on the garlic butter lobster generously.
- Drizzle with any remaining garlic butter from the pan and additional Cajun sauce.
- Crown with the top brioche bun.
