- 2 lbs boneless, skinless chicken breasts, cut into chunks
- 8 slices bacon, cooked and crumbled
- 1 small onion, diced
- 3 cloves garlic, minced
- 8 oz mushrooms, sliced
- 2 cups low-sodium chicken broth
- 1 can (10.5 oz) cream of mushroom soup
- 1 teaspoon paprika
- 1 teaspoon dried thyme
Instructions
- Place chicken chunks in the slow cooker.
- Add diced onion, minced garlic, and sliced mushrooms.
- In a bowl, whisk together chicken broth, cream of mushroom soup, paprika, and dried thyme.
- Pour the mixture over the chicken and vegetables in the slow cooker.
- Cover and cook on low for 6-7 hours or on high for 3-4 hours, until chicken is tender.
- Stir in crumbled bacon just before serving.
- Serve over fluffy rice.
Notes
For extra richness, stir in 1/2 cup sour cream during the last 30 minutes of cooking. Rice not included in ingredient list; prepare separately.
