Ingredients

  • 1 lb flank steak
  • 2 ripe avocados, sliced
  • 4 ears of corn, roasted
  • 1 cup fresh cilantro, chopped
  • 1/2 cup sour cream
  • 2 cloves garlic, minced
  • Juice of 2 limes
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 1 red onion, sliced

Instructions

  1. Preheat grill to medium-high heat.
  2. Season the steak with salt and pepper, then grill for 4-5 minutes per side for medium-rare.
  3. While the steak rests, roast the corn on the grill for 10 minutes, turning occasionally.
  4. In a blender, combine cilantro, sour cream, garlic, and lime juice; blend until smooth to make the sauce.
  5. Slice the steak and assemble the bowl with avocado, roasted corn, and red onion.
  6. Drizzle with cilantro cream sauce and serve immediately.

Notes

For a spicier version, add diced jalapeños to the sauce.
