- 3 cups seedless watermelon, cut into 1-inch cubes
- 16 large fresh strawberries, hulled
- 1 cup fresh blueberries
- 1 tbsp fresh lime juice
- For the Creamy Filling:
- 4 oz (115 g) cream cheese, softened
- 1/2 cup whipped topping
- 2 tbsp honey
- 1 tsp vanilla extract
- For the Strawberry Glaze:
- 1/2 cup strawberry preserves
- 1 tbsp fresh lemon juice
- 1 tbsp water
- For Garnish (optional):
- Fresh mint leaves
- Lime zest
- Finely chopped pistachios
Instructions
- In a small bowl, beat together the cream cheese, whipped topping, honey, and vanilla until smooth.
- In a saucepan over low heat, combine the strawberry preserves, lemon juice, and water. Stir until smooth, then let cool.
- Pat the watermelon cubes dry with paper towels.
- Pipe or spoon a small amount of the creamy filling onto each watermelon cube.
- Top each with a strawberry and secure with a toothpick if needed.
- Add a few blueberries around the strawberries for extra color and texture.
- Drizzle the strawberry glaze over the assembled fruit bombs.
- Garnish with mint leaves, lime zest, and chopped pistachios.
- Chill for 15–20 minutes before serving.
